want a quick and east chicken dish?
I have a friend that has surgery the other day, and I want to take her and her family a dinner. I need it to be easy, fool proof, one pot/dish, and most of all i need it to be yummy. every one loves chicken and it is known to have healing properties, so I'm going to make them an old stand by.
this is the break down.
what you need
1 whole fresh chicken
one box stuffing mix
2 cans Cheddar cheese soup
1 3/4 cup chicken broth
1/4 cup melted butter
1 can dinner rolls
1 TB spoon chicken base
3 celery stalks with leaves
pepper and garlic to taste (dont add salt because the chicken base is loaded with it)
take the chicken and put it in a stock pot
add six cups of water
chicken base
celery
pepper
garlic
cover with a lid and boil on high till meat thermometer reads 200 degrees. at that point you have littlerly cooked the chicken till it will fall off the bone. :) less work for u.
place chicken on a plate and set aside for cooling ( keep your home made chicken stock)
when chicken is cool enough to handle (resting for 15- 20 minutes), pick off the meat and toss out the rest.
take a 9x13 baking dish and spray with Pam
poor stuffing mix in bottom
the next layer is your chicken
the next layer is your liquid
in a large bowl add soup, butter, and chicken broth together and mix then poor it over the chicken and stuffing.
the final layer is the uncooked can of dinner rolls.
cover the dish loosely with foil and bake at 350 for 30 minutes then remove foil and continue to bake for 15 more minutes to brown the rolls. as soon as the meal comes out of the oven you can brush the rolls with butter if you like.
** if you don't like rolls on the top then you can have the top layer be mashed potatoes and sprinkle with cheese for the last 15 minutes. very yummy.
*** serve with a salad or other veggie and pat yourself on the back.
if you like you can add noodles to the remaining broth and any remaining chick meat and you have chicken noodle soup. two for the price of one. good luck :)
